This is a real quickie soup that boasts lotz of goodness. It is from the Better Homes and Gardens Cookbook of long, long ago when I was but a child.
Place the following in a large cook pot. Stir and simmer 1 1/2 hours covered.
2 C (1 pkg) lentils, rinsed
8 C water
2 slices raw bacon, sliced into very narrow strips
1/2 C chopped onions
1/2 C chopped celery
1/2 C chopped carrots
1 clove chopped garlic
3 T snipped fresh parsley or 2 t dried parsley
1 t ground oregano
2 1/2 t salt
1/4 t pepper
Add: 1 - 1# can stewed tomatoes and 2 T red wind vinegar
Simmer 30 minutes longer, covered. Meantime cook link sausage to remove excess grease. Cut into bite size pieces and add to soup mixture. Serve with cornbread.
April and Sarabeth came for a visit on Monday, Mar. 30. On Tuesday, I fixed this soup, and much to my delight and surprise, Sarabeth, my 17 month old granddaughter, loved it.
I don't follow the recipe exactly. I go a little heavier on the veggies and the tomatoes. You can adjust this to your family's liking.

Question
Would this be the place for my "Impossible O'Possum" stew recipe? You know that Possums are Irish. The "O" was dropped sometime in the last century.
